Blackcurrant Cordial
We have a giant blackcurrant bush just outside of our front door, and while we have often made jam, we were at a loss as to what else to make with the abundance of currants it produces.
So, last year, we decided to give blackcurrant cordial a go. It was an instant hit and didn’t even last long enough to go out of date or share with anyone!
So this year, we made extra! It’s such a refreshing drink mixed with water or, for added fizz, mix it with lemonade.

Blackcurrant Jam
As I said above, we also love to make blackcurrant jam. The taste is slightly more bitter than store-bought jam, so I would suggest starting with the recipe and playing around slightly with the sugar content. The general rule is 1:1, so equal amounts of fruit to sugar. If you prefer a sweeter jam, then it may be worth experimenting with different fruits such as strawberries.

Make sure to read up on the best way to sterilise your swing-top bottles and jars; a simple Google search will provide a wealth of information.
This is such a fun family activity! Everything from picking the fruit to enjoying your cordial/jam can be done in an afternoon. This is something we’ll do for many years to come, and I hope it becomes a tradition that our children think of each time summertime comes around.
